The owner brings soy sauce from their hometown in Hyogo Prefecture and adds a layer of chicken oil to the clear soy sauce broth. The silky thin noodles are topped with char siu, shrimp wontons, bamboo shoots, and trefoil.
The soup has a clear soy sauce fragrance and a subtle salty taste that we really enjoyed. The noodles are made of wheat from Hokkaido and are quite delicate and silky, but personally, I prefer noodles with a bit more bite that can hold the soup better.
The chicken char siu is made of fresh pork loin and shoulder from Hokkaido, and it really tastes great and fresh. It feels like there is a layer of fresh flavour added behind the chicken, perhaps with seafood or other ingredients.
The shrimp wontons are ordinary and similar to what you would get at a Hong Kong restaurant. The bamboo shoots are worth mentioning because they are well-prepared and not at all pungent, but rather refreshing.
Besides the soup base, all the ingredients in both bowls of ramen are the same, so I will mainly introduce the shio soup base here. The broth is made with the restaurant’s signature chicken soup base, and is of course an essential ingredient. The clear soup with a refreshing taste breaks the impression of traditional shio ramen.
